When registered dietitian Barbara Gollman and I wrote The Phytopia Cookbook, we were ahead of our time. The recipes endure—wonderful dishes such as Thai Hot and Sour Soup, Apple Clafouti and Fruited Moroccan Chicken that nudge meat to a supporting role—and taste so good you forget they’re good for you. The cookbook includes state-of-the-art research at the time (1998) about the benefits of a plant-centered diet, but we deliberately placed the science BEHIND the recipes as advocates of good-tasting food first.
