The recipes endure—wonderful dishes such as Thai Hot and Sour Soup, Apple Clafouti and Fruited Moroccan Chicken that nudge meat to a supporting role—and taste so good you forget they’re good for you. The cookbook includes state-of-the-art research at the time (1998) about the benefits of a plant-centered diet, but we deliberately placed the science BEHIND the recipes as advocates of good-tasting food first.
